Picking up the Pieces…

It would be easier to say I had writer’s block but that wasn’t completely the case…To not sidetrack too much, I’ll give you the short version.  What most of you may not know until now is that I had some personal events in my life that made me want to lay low for a while.  If there is one regret I have this year, it would be that I let this blog go unattended like I did…Recently I realized that this blog took off the way it did for a reason and it’s a good enough reason that I need to pick myself up and remember those I lost recently and make that the strength to keep everything afloat.  I’d like to thank my family (especially my husband and daughter), all of my friends (both near and far), my church family, and those random strangers who I inspire for helping me through what seems to have been a really rough patch in my life.  But as the saying goes, there is always light at the end of the tunnel and I have a lot of exciting things to share with all of you…

Processing the Awesomeness that is Unprocessed…

As most of you guys know, bloggers in general don’t get paid in money to do what they do best.  Instead, they get paid in freebies- or in my case cookbooks!  Basically, most of my days consist of cooking my way through a cookbook or a couple cookbooks simultaneously.  My husband doesn’t seem to mind as every day he gets to experience something new on his plate and as always, he loves to give me his input.  This past month or so was no different except for this time, Chuck knew that if the recipe came from Chef AJ’s book, Unprocessed, he knew it was a guaranteed winner!

Heartburn Out, Seasonal Squash In…

I know what you’re thinking…”What a horrible title!!!”  Well I guess I am feeling pretty rusty due to recent events but all bad jokes aside, the human body is a mysterious thing…Once you think you have it figured out, it throws you a curveball like no other.  This is pretty much what I have been living with for quite some time.  As most of you know, I suffer from Acid Reflux Disease (GERD for the know-it-alls out there!).  I thought I had it under control until a few weeks ago- pretty much since my last post but this time it came in full effect and it was very scary to say the least.  For those of you who never dealt with it (I envy you!), it can feel like you are walking around with constant chest pains….and of course you feel like you are having a heart attack and are close to dying!  This bad reflux spell pretty much made my life impossible to say the least.  In fact, I was probably being impossible to my husband in the process since he had to deal with my numerous phone calls while he was in the office urging him to go home as the pain was so unbearable.  Luckily, Chuck is trained in my reflux anxiety and found ways to help me over the phone without missing much work.  But there is a light to the end of this tunnel…

24 Hours in Virginia Beach (and Norfolk!)…

This is how I felt while looking for vegan friendly restaurants to share with all of you!

So maybe I have been slacking slightly with posting, but it is all with good reason.  Seems like out of nowhere, my husband decided to use some more paid leave and along with it, we started going places again like before Raegan was born.  Since this was her first overnight trip out of the comforts of her crib, we were on edge on how she was going to react, hence why we decided to only spend one night at the beach.  Along with the stress of the baby, there was also a HUGE question as to where to go to find vegan friendly food.  For those of you who know me and my family, we L-O-V-E to eat our way through every town/city/destination/etc. but this time we were working on limited time and from what little I saw on the internet, limited resources 🙁  Overall, our end result was perfect and I like to think we used those 24 hours to our best advantage and I am happy to share with all of you my food voyage….
